    While Butch's has been a Snowmass Village favorite since 1992, it really started back in 1979 at the Tippler in Aspen. That's when the owner of the Tippler, Sirous, let Butch put in a oyster bar for the apre ski crowd. It was a instant success and Butch knew he was onto something. For the next 8 years Butch would spend summers on Cape Cod diving for lobsters and winters in Aspen shucking oysters and clams. In 1988 Butch moved his operation literally next door to the Grand Aspen Hotel and opened a small restaurant that was in a 20x30 blue tent on the hotels outside patio. This was really the first Lobster Bar. You could walk in and there would be Butch and his friend Mike cooking lobsters and all sorts of seafood. Then, in 1992, Butch moved the restaurant to the Timberline Condo's in Snowmass Village where he is today. Butch's is really a oyster bar that got big. As you can see by the menu and the pictures(literally hundreds of them on the walls) Butch's has a East Coast flavor in a casual and friendly atmosphere. When you come in ask Butch to tell you about the time he caught a 19 lb. lobster. Also, if you can tell Butch what a lobster with no claws is called your first drink is on him.
